NUTRITION RELATED WORK EXPERIENCE

Summer Co-Op: Nutrition Services Department -160 Hours
June 2015-July 2015
As a Summer Co-Op at Abington Memorial Hospital, I spent eight weeks with the Nutrition Services Department. During this time, I assisted with tray line and food preparation and service, as well as, attended weekly professional lunch-n-learns with other Co-Op students. For my final project, I worked closely with the Director of Food Service and Executive Chef to complete a nutritional analysis on all food items sold in the hospital to be displayed on their new electronic menu boards. I presented this project to over thirty co-workers in the Nutrition Service Department and Summer Co-Op Program. In addition, I shadowed various Clinical Dietitians and Physicians in the MICU, Renal, Cardiology and Neurology units. I became familiar with electronic medical records, food service policies and procedures, and the importance of working as a team and communicating clearly within the interdisciplinary health care team.

Simpson House Retirement Community
Dietary Intern-400 Hours
May 2015-August 2015
My time as a Dietary Intern at Simpson House was spent mainly with the Clinical Dietitian, Nutrition Care Manager and Executive Chef. I spent the majority of my time completing annual and quarterly nutrition assessments for the skilled nursing residents, which included residents with kidney failure, tube feeding, and dementia. I worked closely with the nurses and physicians, observed weekly wound rounds, and completed daily meal rounds in order to learn more about the residents nutritional needs. In preparation for the facilities expected State Inspection, I worked with the Executive Chef to complete a food safety and sanitation audit in the kitchen. I then worked with the staff and dietary aides to make improvements regarding the deficiencies that I observed. In addition, I also created and implemented a nutrition education activity on calcium and vitamin D for bone health, for both the skilled nursing and Independent Living residents. During this time, I became comfortable speaking with the nurses, physicians and other members of the health care team. I was able to step out of my comfort zone in order to make sure that the residents received the best possible care and service during their time spent at Simpson House.

Contemporary Nutrition Concerns (NUTR 100)
Teaching Assistant: Penn State University
August 2014-December 2014
As a Teaching Assistant I led review sessions for upcoming exams, and answered any questions or concerns that students had via appointment and email. I also graded individuated projects involving dietary intake, and created an in class activity involving food safety practices in the kitchen. During this time I built upon my time management and leadership skills.
SkinnyMs: Women's Health and Fitness Website
Virtual Nutrition Communications Intern
May 2014-August 2014
As a Nutrition Intern For SkinnyMs, a women's health and fitness website, I was able to build upon my writing and social media skills. Each week I wrote 2-3 nutrition and fitness related articles based on popular nutrition trends and evidence based research. I also managed the website's Twitter and StumbleUpon pages, and contributed to the monthly newsletters that were sent to all subscribers via email. For my final project, I created a slow cooker recipe calendar for the month of September, and summer recipe calendar for the month of August. Each day on the calendar was linked with a recipe that utilized weekly leftovers and healthy ingredients for those with a busy schedule looking to improve their eating habits. As this was a virtual internship, I learned the importance of staying organized, meeting deadlines, and taking the extra step to ask for help when needed. I was able to work with SkinnyMs. team members from all over the country, which was a unique experience.

Box Office Ticket Attendant (Student Supervisor)
August 2012-Present
I currently work part time as a box office ticket attendant for the Center for the Performing Arts at Penn State. For the past four years, I have been working 12-15 hours a week, in addition to a full course load and extracurricular activities. I have recently been promoted to a student supervisor, in which I train and supervise new student workers during evening performances. In addition, in person and over the phone transactions are made daily. Working at the theater during the academic school year has taught me a great deal about customer service and time management
